A distillery from Saint-Hyacinthe awarded internationally

Even before its marketing launch, NOROI Dry Gin has won a gold medal at the 2019 World Spirits Award last March. It's an honor for the distillery because almost 550 products were registered representing 117 distilleries from 25 different countries. In addition, their orange liqueur has also stood out with a double-gold medal. Jonathan Robin, president and owner of NOROI distillery, is really proud of the two prestigious awards. "To have won a gold medal for our gin and a double-gold medal for our orange liqueur, for us, it is an achievement that exceeds our expectations, especially for a microdistillery that has just launched its first two products." Carl Poisson and the science of taste

The Quebec gin NOROI has already been awarded a gold medal at the 2019 World Spirits Award, which took place on March 22nd. The National Research Council of Canada Industrial Research Assistance Program (NRC-IRAP) provides NOROI distillery with financial support to scientifically determine, through chemical analysis, the best assembly of hot and cold distillation. The Quebec company is currently innovating through its use of cold distillation, also known as "vacuum distillation". The conventional method uses heat to evaporate the mixture of ethanol and water. The distinction of the Saint-Hyacinthe microdistillery lies in the use of a glass still, specific to the pharmaceutical industry, to distil alcohol and herbs below zero degrees Celsius. In addition to dry gin, an orange liqueur from NOROI distillery will be on the market by summer. It even won the double-gold medal at the World Spirits Award.

Bilboquet has an offshoot: the Olten brewery

Microbrewery Le Bilboquet - which has been in existence since 1990 - opened the Olten brewery in August 2018, only a few weeks before launching Fixi Kombucha. Although Le Bilboquet still has its pub and brewery in downtown Saint-Hyacinthe, the addition of the Olten plant gives it a greater production capacity to brew quality beers in larger volumes. Olten Lager, a premium lager with 4% alcohol and almost all the gluten removed, is currently available. This spring, the Olten Session IPL deglutinated to 4% will be launched. Both beers have 88 calories and zero grams of sugar. They are sold in 355 ml cans. The new distillery has already won the gold medal at the World Spirits Award competition for its NOROI Dry Gin. Its NOROI Orange Liqueur won the double gold medal. The NOROI Lemon and Lime Vodka with 4%, 80 calories and zero grams of sugar was released in April. Then, in May, the cocktail bitters, NOROI Orange Bitters, will go on sale at the SAQ or on-site. For kombucha, the flavors offered are apple, ginger and cardamom; raspberry and rooibos tea; and strawberry, basil and Sichuan pepper. The company uses real fruit concentrates as sweeteners.

Official opening

NOROI distillery has just launched its installation in the Olivier-Chalifoux industrial park of Saint-Hyacinthe, becoming the first distillery in the city. Made with a glass still that cold-distils, the Quebec NOROI Dry Gin has a unique distillation process. NOROI microdistillery in Quebec is one of the most innovative in the world. With a custom-made glass still and a liquid nitrogen condenser that operates at a temperature of -196°C, the process creates products with a unique aromatic profile. Cold distillation has the advantage of preserving heat-sensitive flavors that would degrade with a traditional hot still. The launch of the first three products, including a dry gin with a hint of citrus fruit, will be followed by the launch of a new vodka made from grains grown exclusively within a 20-km radius of the microdistillery. An eau de vie made from local maple syrup is also available.

Beer, spirits, kombucha and coffee under one roof

A new industrial incubator is being built in the Olivier-Chalifoux Park. Located in the same building on Choquette Boulevard, Fixi Kombucha, Brasserie Olten, Microbrasserie Le Bilboquet and Distillerie NOROI intend to combine their expertise to attract consumers of beer, spirits and kombucha. NOROI distillery has released a ready-to-drink lemon and lime vodka soda and the first cold-distilled Quebec gin. Already owner of Le Bilboquet microbrewery, the agri-food company has created a new brewery that is launching with the marketing of its deglutinated beer: the Olten. Fixi Kombucha has also launched its three new flavors: strawberry-basil, raspberry-roiboos and apple-ginger. Kombucha is the result of a long fermentation of tea and plants.

The Saint-Hyacinthe Technopole highlighted the opening of its new agri-food incubator, which houses many companies under the same roof: Fixi Kombucha inc, Microbrasserie Le Bilboquet, Brasserie Olten and Distillerie NOROI. In addition to sharing the same building, the companies occupying this incubator will also share certain equipment, work and storage areas and even some employees. This is the case in particular for the equipment and canning activities that will be common to all the companies in the incubator.
